Kiwi and Mango Hot Sauce!

Ingredients

Diced mango 150g

Diced kiwi 150g

2 tbsp coarse ground sea salt

Juice of 3 limes

1 tbsp paprika

1 tbsp chilli powder

1 tbsp balsamic vinegar

1 red onion

3 cloves garlic

2 tbsp light soy sauce

2 tbsp caster sugar

1 tsp cinnamon

1 tsp ground black pepper

4 scotch bonnet chillies

10 birds eye chillies

3 heaped tbsp tomato paste

2 cups water

1 and a half stalks of lemongrass roughly chopped

Dark chocolate 25g

1 tbsp flour

Chopped chives 10g


  1. Mix together your mango, kiwi, sea salt, paprika, chilli powder and the juice of two limes. Place in the fridge for 2 hours to let the flavours mix and develop.

  2. Mince your onions and garlic and place in a pan over a medium heat with your soy sauce and caster sugar until jammy and partially caramelised (10-15 mins).

  3. Add in your chillies, finely chopped, along with your balsamic vinegar, cinnamon, black pepper, lemon grass and the juice of your other lime. Cook over a medium heat for 5 minutes before adding your tomato paste, water, dark chocolate and fruit base mix.

  4. Sift in 1 tbsp flour, stir till combined, then simmer and reduce the mixture for 15-20 minutes over medium heat before finishing with your chopped chives.

  5. Remove from heat and allow to cool before blending the mixture and adding back into the pan. Reduce for a further 5-10 mins over medium low heat until nice and thick.

  6. Blend and strain the mixture through a sieve. Anything that does not pass through the sieve blend again until it is smooth and add to final sauce.

  7. Bottle and enjoy!

This hot sauce was made for two reasons! As a present to my friend for Christmas and also as an experiment in fresher, sweeter hot sauces. Hope you all enjoy!
